Recipes

Here you can find three paella recipes for all tastes. They are my mother's recipes and cooking does not get more authentic than this. Paella is originally from the l'horta nort (area just north of Valencia city), in fact its origins can be found in Northern Africa during the reign of the Moors. Other regions sometimes use different ingredients and each village can often claim to have the most authentic version, competition is both stiff and fierce.
